What do you do when you can’t find yourfavorite peppermint ice cream in the grocery stores? You just make your own. Yep, it’s really that easy! We have an ice cream maker, but it’s been collecting dust after we discovered no churn ice cream! The only hard part is deciding what flavor to make. We’ve done cake batter, bubble gum, mint chocolate chip and today…peppermint. SO yummy. We added a bit too much peppermint the first time, so just trust me on the measurements. Otherwise, it may end up tasting more like peppermint extract than anything else. A whole lot of alcohol flavored aftertaste!

What is No Churn Ice Cream?

No churn basically means—no ice cream maker. We have an ice cream maker that we use occasionally, but no churn recipes don’t require any special equipment.

2 c. heavy whipping cream

1 can sweetened condensed milk

6 drops red food coloring (for pink color, optional)

3/4 tsp. peppermint extract

2/3 c. crushed peppermint candy (starlight mints) or peppermint sticks

Crush candy with a rolling pin or mallet. I put my candy inside a plastic bag before crushing to minimize the mess. Set aside.

Beat whipping cream in a bowl with an electric mixer until stiff peaks form. Fold in condensed milk, peppermint extract, food coloring with a rubber spatula.

Pour 1/3 of the ice cream mixture into a loaf pan or freezer-safe container. Sprinkle with 1/3 of the crushed candies. Add another layer of ice cream, then another layer of candy. Repeat once more before placing ice cream into the freezer.

Freeze 6-8 hours.

I like A LOT of peppermint candy crunch. If you think you’d like less, you can skip the middle layer of candy and just add one layer on the bottom and sprinkle a bit more on the very top.

Tip: give your ice cream a stir every hour or two. Just to help it be nice and scoopable when it’s finished.
